Serves 2. Takes about 15 mins If your quinoa is already cooked
2 medium size tomato
1 cup jicama kimchi
1/4 cup cooked quinoa
1/2 apple, diced
1/2 stem of green onion, chopped
2 tablespoon jicama kimchi juice
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspoon minced garlic
a pinch of himalayan salt and black pepper
Garnish with any fresh herb.
Make like this:
Dice tomatoes and the apple in cube sizes. Add jicama kimchi and cooked quinoa. Toss all the ingredients in to the dressing.
Dressing: mix garlic, kimchi juice, olive oil, vinegar, salt and pepper
