Our favorite food groups, in no particular order: kimchi, tortillas, guacamole and cheese. This simply scrumptious snack is simple to make and a joy to eat. The kimchi adds a note of sour spice to the cheesy richness. It’s all tied together by the nutty fragrance of the tortilla. And a dab of guacamole never hurts.
Cheese (we used a three-cheese blend)
Volcano Kimchi (we used napa cabbage kimchi here. Our Jicama KImchi Salsa would also work well)
Cilantro (for garnish)
Make like this:
Heat up a skillet over medium to high heat. Place two small corn tortillas on skillet and toast lightly on one side. Flip tortillas and layer cheese and kimchi on one of the two tortillas. Place the other tortilla on top and continue to heat, flipping occasionally, until cheese is melted. Top with guacamole and a sprig of cilantro. Enjoy.
