Shh... Don't tell anyone, but the secret to good kimchi starts with using the best ingredients available. That's our philosophy at Volcano Kimchi. We brine the vegetables using moderate portions of french grey sea salt. We then add the brined vegetables to our kimchi sauce, a blend of organic vegetables and spices, and ferment in room temperature for anywhere from two-to-three days, depending on the weather. Finally, we pack each jar individually before delivery.
